Why Galettes Are Perfect for Young Cooks

A galette is a free-form tart — rustic by design, which makes it ideal for young chefs. There’s no pie dish to fuss with, no perfect crimped edges required. Kids learn real skills like making dough from scratch, managing moisture in tomatoes, and building layers of flavor — all while having fun.

 


Foodie Kids Cheese & Tomato Galette

Ingredients

For the crust:

  • 1¼ cups all-purpose flour
  • ½ tsp salt
  • 1 tsp sugar
  • ½ cup (1 stick) cold butter, cubed
  • 3–4 tbsp ice water

For the filling:

  • 2–3 medium roma tomatoes, thinly sliced
  • 1 cup shredded mozzarella and cheddar blend
  • ¼ cup grated parmesan
  • 2 tbsp cream cheese
  • 1–2 cloves garlic, minced
  • 1 tbsp olive oil
  • Salt, pepper, and 1 tsp dried Italian seasoning or fresh basil

For finishing:

  • 1 egg (for egg wash)
  • Sesame Seeds for sprinkling (optional)
  • Extra olive oil or honey drizzle (optional)

Instructions

  1. Make the dough. Mix flour, salt, and sugar. Cut in cold butter until crumbly. Add ice water one tablespoon at a time until dough comes together. Form into a disk, wrap, and chill for at least 30 minutes.
  2. Prep the tomatoes. Lay slices on paper towels, sprinkle lightly with salt, and let sit 10–15 minutes. This pulls out excess moisture — your anti-soggy secret weapon!
  3. Roll the dough. Roll into a rough 10–12 inch circle on parchment. Rustic and imperfect is totally the vibe here.
  4. Build the base. Spread cream cheese in the center, leaving a 1.5–2 inch border around the edge.
  5. Layer the filling. Add shredded cheese, then tomatoes, then garlic, seasoning, salt, pepper, and a drizzle of olive oil.
  6. Fold the edges. Gently pleat and fold the crust border over the filling.
  7. Egg wash. Brush the crust with beaten egg for a golden finish.
  8. Bake. Bake at 400°F for 30–40 minutes until the crust is golden and crisp.
  9. Finish & serve. Let cool slightly, then top with parmesan and fresh basil.
